Tips to Cook Arabian Chicken Biryani with Leftover Rice

Do you have leftover rice? Let’s make the most of it and cook Arabian chicken biryani for a flavourful treat! Arabic biryani is a delightful dish combining chicken, rice, and various spices.

The Arabic biryani doesn’t use chillies like Indian biryani, so it doesn’t taste too spicy. It uses Middle Eastern spice mix that makes it taste delicious.

Ingredients required for Arabic Biryani Recipe 

The ingredients of the Arabic biryani recipe include the following:

Leftover rice: Basmati rice is perfect for biryani. If you have leftover basmati rice, you can use it to make Arabic biryani.

Chicken: Most Middle Eastern recipes include meat, especially chicken, as a main ingredient. We will use chicken since it’s easier to cook than mutton.

Herbs & vegetables: grated garlic and ginger add flavours to the biryani. You can’t forget onions and tomatoes too. Fry the onions and set them aside for garnishing.

Spices: This chicken biryani recipe in Arabic style involves spices. To save time, we will use store-bought spices, but we will also use cinnamon sticks, bay leaves, and cloves.

Yogurt: Yogurt is required to marinate the chicken pieces for maximum flavour. 

What to cook first before making the biryani

Before you start the Arabic chicken biryani recipe, you should fry the onions. Take a pan, add oil to it, and fry the sliced onions until golden brown. Make sure the onions are crispier in texture for more flavour.  If you have leftover rice, use it or cook the rice for 40-50 percent, drain the water, and keep aside. 

How to make chicken biryani sauce

  • Take a large pot and add oil to it. Once it’s hot, add grated ginger and garlic. Stir it until fragrant and then add the chopped tomatoes and sauté until tender.

  • Next, add the chopped chicken pieces. Stir continuously for about 5-10 minutes. Once the chicken pieces start releasing juices, add yogurt and spices. Also, add whole spices such as cloves, bay leaves, and cinnamon sticks. Stir well and cook for a few minutes until the chicken pieces are cooked and combined with the spices well. 

  • Once done, remove half of the chicken pieces and set them aside in a bowl. Add leftover rice to the rest of the chicken in the pot. Sprinkle fried onions and add another layer of rice and the chicken from the bowl. Continue this process until the rice is finished. 

  • Cover the pot and let it cook on low heat until the chicken is tender. 

  • Once our biryani is cooked to perfection, switch off the heat, uncover the lid, and transfer it to a serving bowl. Let's make it look even more appetizing by garnishing with fried onions. Serve with your choice of yogurt, salad, or sauce.
